When in DC last my sister served these mini taco things...she took a won ton wrapper and put it in a muffin pan. Put a little spiced meat and cheese on it and baked it for 8-10 min in a 350* oven. When it came out it was topped with lettuce and tomato. Very very good.
When I came home I tried it using omlete fixings...again very very good.
Tonight I made some BBQ chicken, topped with a little cheese...need I say...very very good.
I think I've got myself a keeper. Tomorrow the BBQ will go to work for a little Christmas Eve Day thing at work, but we had to do a taste test first (of course) and hubby wanted to know if there was enough that we could have them for dinner. So even with just the two of us, these work well...they work well for lunch, and freeze well too...
Fast and simple, veristile, and good...just my thing!
I have done it with canned biscuits and seasoned hamburger, salsa been years as it was a food contest I entered it. No I did not win and I did make up and take to nephew's and he seemed to like. I had to roll out the biscuit. Seems I put cheese on them to bake. Been too long ago . Recipe is around some where. Biscuits too high any more. I think I mixed the hambuger and salsa and put in them/ Muffin pan. I could not eat acid stuff I guess any more.
