MY recipes are my own and I donot have a bunch of cookbooks here. I have cookie ones but I was out of eggs and use only one. Son said they were good and I know he ate 3 while going and coming from the farm yesterday afternoon. I had rolled oats and not quick oats. Taste is okay. I have my high altiltude bake book. We will eat them. I told him I had not been baking bread. I could have tired dried eggs that I bought a can of. Really did not think of that.
The banana cookies were soft and he liked them too. Too using a new stove and still trying to get use to it. Pans make a difference too. Any way I did not burn them. So eatable.
I know what I did. I used 2 cups white sugar in stead of one white and one brown and added molasses to make that up and for some reasaon I figured I had doubled the sugar and had not but doubled the oil in place of shortening. So more oil made them crisp. But taste okay. And I had add flax seed meal as short on eggs. Next time less than half of cup of oil instead of 3/4. Called for cup of shortening which I can not use. I am using canola oil for all my baking and frying and so on . I decided on one oil. I do have olive oil yet to use if I have to. About any oil but olive oil is GMO now. Some olive oil has other oil added they say. Right or wrong I am using canola oil. Got to use somehing, soy bean oil cheaper I guess but can not use and corn oil I will break me out. Sam's has these gallon jugs of canola oil. So I get that.
Been baking banana cinnamon, walnut cookies. Some times add a hand full of quick oats. Last cookies were applesauce with chocolate chips and nuts. I have to remember the dough is soft as I am using oil it seems.
