Here's a recipe I'm not sure where to put it. It's a breakfast/brunch item, and you can easily change the ingredients to fit you and your family's likes. It's a Frittata. It's an Italian version of an omelet. I fix this quite often. Recipe is for four people, but can easily be change to fit whatever size group you have. Just remember 2-3 eggs per person.
Frittata (Italian Omelet)
1 small onion 2 your choice color bell pepper (green O.K.) cloves (to taste) minced garlic (to taste, jarred O.K.) 12 eggs 2 jalapenos chopped finely
Roughly chop the onion and bell pepper. Over low heat, saute in an oven proof skillet (I use my cast iron) with the minced garlic and jalapenos until tender. Break and scramble the eggs, then put into skillet with veggies. Stir once to mix veggies evenly. Continue to cook on low heat on stove top 5-7 minutes. Place in a pre-heated 250 degree oven until fully set (approx. 10 minutes) cut into slices and serve with salsa if desired.
I often add mushrooms, ham, crispy bacon, and precooked sausage to this. Feel free to add anything you like.
