Home Made Noodles
Very simple...Recipe is 1 cup flour,1 tsp. salt,one beaten egg.
Mix flour,salt and egg on flour powdered counter top...
Roll out 1/16th inch thick.Looked pretty dry to me so I made an extra batch with an additional egg yolk and 10 cc water.That is the dough in the front,drying for 1/2 hour on a towel before being cut...
Cut with pizza cutter...
On to racks to dry,we let them dry overnight...Noodles can be cooked as soon as cut.Just add each individually to boiling water so they dont stick together,cook until tender.
Into boiling chicken soup (or water) for 1/2 to one hour until tender.The noodles with the extra egg yolk cooked faster and taste better in my opinion though both are VERY good...
Time to eat!Thats my home canned butter in the jar,that works well too,see pictorial on that in canning section...
Made spaghetti noodles with the Pasta attachment for the Oster Kitchen Center.
Trick is to make a very dry dough so they dont stick together.I still had to separate them once they were on the rack.

My version of homemade noodles:
2 cups Flour 2 eggs 1/2 cup water 1 tsp. salt
1 - 1 1/2 cups flour
Assemble doughmaker on mixer. Combine flour, eggs, water and salt in large bowl. Kneed at highest speed, about 3 minutes. Gradually add remaining flour to form a stiff dough. form into a ball. Cover, and rest 10 minutes. Cut into qyarters, roll out thin, and cut into noodles.

have the noodles and a long fork ready
Dump the noodles in
seperate quickly with the fork (they will come apart)
add butter to side of pot (keeps it from boiling over)
boil until done to taste
My favorite: Beef roast and noodles Start with a beef roast cooked with onion and garlic
pull meat apart into bite size pieces, I forgot to take a picture
make gravy with the pan juices
combine the noodles, gravy and meat. I usually put in the crock pot to warm it up good and keep it hot until it's time to eat.

Ingredients from bottom left.Sushi Ginger,sticky rice (2 cups rice,1.5 cups water,2 TBSP Sushi vinegar,cooked in auto rice cooker)Nori (Seaweed sheets),1/4 inch philly cheese slices and sliced smoked Salmon,1/4 inch sliced cucumber,grated carrots,sliced green onions

Rice on Nori.Wet your hands before rice is put on sheet.
California Roll-Salmon(or fake crab or cooked shrimp)onion slices,cucumber,ginger,carrot.
Philadelphia Roll-Philly cheese slice,cucumber,smoked salmon.
Half rolled up-On far edge you wet fingers and wet the edge.Smear a small dab of Wasabi Paste(Comes in like a toothpaste tube,HOT!) on far edge.Finish rolling up.
Fully rolled.Make sure edges sealed.If not,wet fingers and run along edge.Place edge down on tray

Slicing roll-Rinse knife between each roll.I hold roll on left,Mrs holds right,and I slice.Make sure edge is on bottom when cutting
Completed on tray.Sprinkle with sesame seeds lightly toasted in pan.Serve with soy sauce(my favorite) or peanut sauce or Asian Chili sauce.
