After paring the rind, and taking out the guts (LOL), cut the pumpkin "meat" into small chunks. Probably about 1" in size. I really didn't measure. Then boil the chunks in water for about 2 minutes or so.
Then put the pumpkins and the water juice from pan into jars. Quart jars canned for 90 minutes at 11 lbs. pressure at my place.
You would best be served to consult your canning guide. I tend to fly by the seat of my pants. LOL!
Edit-Forgot to add: leave 1 inch headspace upon adding pumpkin and boiling water, plus I added 1 teaspoon of salt per quart, this optional.
Hi MightySpuds & Mommajeane-You should be able to do the same thing with winter squash or pumpkin. In my canning book, it says for "pumpkins or winter squash"-the directions are the same. It likes those ones in the picture-they are Cushaw Green Striped. First year I planted them. I'm not sure if they are pumpkin or squash. I have seen they labeled as Cushaw Pumpkin and Cushaw Squash. One thing I know for sure, the Cushaw were much easier to peel than the orange pumpkins. Some of those pumpkins were Sugar Pie Pumpkins and some were Jack-o-Lanterns. The Cushaws were just a little lighter in color once cooked. I really liked those Cushaws. They cook up creamy too. I'm going to plant those again next year.
Thanks for the hint on the Cushaws. We had pumpkin last night for dinner (the one I made the stew in that didn't work- I just mashed it like potatoes) is that what you do with yours? I'm looking for other things than pie and bread to do with them - I've done 3 different soups and all were a bust with the family.
Hello Bonnie. Hope you are doing well. The only thing I have done with the Cushaws so far are for bread and pies too. Just chunk them up and cook them, and then I run it through the food processor to cream them up. I'm going to have to find some new recipes to use.
I'm not sure yet, but I am gonna try to eat pumpkin like I do squash.... I want to try it, anyway. I fry it and I cook it "down"... boiled in a little water, some butter, sugar, salt and pepper.... maybe some onion....
I may try this... but my pumpkins are gone for the year, stupid hurricane took'em.
