Using fruit, either fresh or dehydrated.... and a big brisket....
....cut some deep slices into the brisket.
Shove some oranges and lemons down in it with some onion and garlic, among other spices and seasonings....
Rub the whole thing down with some brown sugar and seasonings.... tie it all back together with some string, wrap it in aluminum foil several times (the heavy duty stuff) and then setting it over a VERY slow fire... maybe even in the ground, putting the coals on top.

Lemme tell you.......... a pork roast was never as good as it was overnighted in a ziploc baggie with brown sugar and spices, then rotisseried or on a slow grill .....mmmmmmmm....... or with applesauce and spices and a little sugar....... anything "sweet" with pork, it just works.

Kim.......... If you see this could you tell me how you do the applesauce and what spices you use with the pork? That sounds good, and I have plenty of applesauce. I love reading these, now I want to try them. I had never thought of sticking hunks of lemon or orange in the roast. I usually just put garlic and onions with/in mine.
